2021 Dans La Lune
"Dans la Lune" is a Banyuls-style dessert wine made from 100% estate-grown Grenache grapes. Banyuls is a French fortified dessert wine made in and around the town of Banyuls in the south of France. The winemaking process, known in France as mutage, is similar to Port, where alcohol is added before fermentation is complete, while sugars are still high. The addition of alcohol stops the fermentation, and the natural sweetness of the grapes is preserved. We took an extra step to make our dessert wine 100% estate and stopped fermentation with alcohol distilled from our own organically-farmed Grenache grapes. The result? A 100% dry-farmed, all estate, hand-picked, hand-bottled, Grenache dessert wine. A true expression of our terroir and a real labor of love.
